Soto Betawi Jakarta Beef Soup – Originated from Jakarta. The main ingredient is the spiced beef broth with the hint of milk and simmered with aromatic herbs and spices.
Soto Madura Madura Beef Soup – Originated from Madura island, a small island east of Java. It is prepared by boiling the beef broth with mainly lemongrass as its herbs. It is usually served with just meat and boiled egg.
Soto Ayam Javanese Chicken Soup – There are many variations of Soto Ayam in Indonesia. However, Tok Tok’s Soto Ayam is prepared in lamongan style where is it topped with a main spice called Koya (fried garlic mashed with prawn crackers). The chicken broth flavor is enhanced by fresh turmeric and other traditional spices.
